Mulberry Granola: A Nutritious and Delicious Breakfast Option

Mulberry granola is a delightful and nutritious breakfast option that can be enjoyed on its own, with milk, or yogurt. This homemade granola is packed with oats, nuts, seeds, and dried mulberries, providing a satisfying crunch and a burst of flavor. Here's how you can make your own batch of mulberry granola at home:

Ingredients:

  • 3 cups rolled oats
  • 1 cup chopped nuts (such as almonds, pecans, or walnuts)
  • 1/2 cup seeds (such as pumpkin or sunflower seeds)
  • 1/2 cup shredded coconut
  • 1/2 cup dried mulberries
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions:

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, dried mulberries, cinnamon, and salt.
  3. In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and mix until everything is well coated.
  5. Spread the granola mixture evenly onto the prepared baking sheet.
  6. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and crisp.
  7. Remove from the oven and let it cool completely. The granola will continue to crisp up as it cools.
  8. Once cooled, store the granola in an airtight container at room temperature.

Optional Additions:

  • Dried fruit (such as raisins, cranberries, or apricots) can be added after baking for an extra burst of sweetness.
  • For a chocolatey twist, add chocolate chips or cocoa nibs after the granola has cooled.

Serve and Enjoy: Enjoy your homemade mulberry granola as a topping for yogurt, a crunchy addition to smoothie bowls, or simply as a nutritious snack on its own. Experiment with different nuts, seeds, and spices to create your own unique granola blend!
